- 1 small shallot, finely chopped
- 2 cups cherry tomatoes, halved
- 1 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp chili flakes (optional)
- 1 tsp maple syrup
- Salt and pepper, to taste
- Fresh parsley or basil for garnish
- Grated Parmesan cheese or a vegan alternative (optional)
Instructions
- Cook the Pasta: Prepare the gluten-free spaghetti according to the package instructions. Drain and set aside.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and shallots, cooking until fragrant, about 2-3 minutes.
- Cook the Tomatoes: Add the cherry tomatoes to the skillet. Cook, stirring occasionally, until they soften and begin to burst, about 5-7 minutes.
- Add Flavorings: Stir in the tomato paste, dried basil, oregano, and chili flakes (if using). Cook for another 2 minutes.
- Sweeten and Season: Add the maple syrup, and season with salt and pepper to taste. Mix well.
- Combine with Pasta: Toss the cooked spaghetti into the skillet, coating it evenly with the sauce.
- Garnish and Serve: Serve hot, garnished with fresh parsley or basil and grated Parmesan cheese if desired.
