    • 1 lb shrimp, peeled and deveined
    • 1 tbsp olive oil
    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 cup coconut milk
    • 2 tbsp Jamaican curry powder
    • 1 tsp thyme (fresh or dried)
    • 1 scotch bonnet pepper (optional, for heat)
    • Salt and black pepper to taste
  • Optional Garnish:
    • Fresh cilantro or parsley for serving

Instructions

  1. Prepare the Base:
    • Heat olive oil in a large skillet over medium heat. Add the chopped onion, garlic, and bell peppers. Sauté for 2–3 minutes until softened.
  2. Toast the Spices:
    • Sprinkle in Jamaican curry powder and thyme, stirring for 1 minute to release the aroma of the spices.
  3. Make the Sauce:
    • Add the coconut milk and mix well. If using a scotch bonnet pepper, carefully add it to the skillet (whole or chopped, depending on your desired heat level). Season the sauce with salt and black pepper. Bring to a gentle simmer.
  4. Cook the Shrimp:
    • Add the shrimp to the skillet and cook for 3–5 minutes, stirring occasionally, until the shrimp turn pink and are fully cooked.
  5. Finish and Serve:
    • Remove from heat. Garnish with fresh cilantro or parsley. Serve immediately with your choice of sides.
