- 1 tsp thyme (fresh or dried)
- 1 scotch bonnet pepper (optional, for heat)

- Prepare the Base:
- Heat olive oil in a large skillet over medium heat. Add the chopped onion, garlic, and bell peppers. Sauté for 2–3 minutes until softened.
- Toast the Spices:
- Sprinkle in Jamaican curry powder and thyme, stirring for 1 minute to release the aroma of the spices.
- Make the Sauce:
- Add the coconut milk and mix well. If using a scotch bonnet pepper, carefully add it to the skillet (whole or chopped, depending on your desired heat level). Season the sauce with salt and black pepper. Bring to a gentle simmer.
- Cook the Shrimp:
- Add the shrimp to the skillet and cook for 3–5 minutes, stirring occasionally, until the shrimp turn pink and are fully cooked.
