    • 1 pound breakfast sausage
    • 2 tablespoons butter
    • 1/4 cup all-purpose flour
    • 2 cups milk
    • Salt and pepper to taste
  • For the Bowl:
    • 4 cups frozen tater tots
    • 4 large eggs
    • 1 cup shredded cheddar cheese
    • Chopped fresh chives (optional, for garnish)

Instructions

  1. Prepare the Sausage Gravy:
    • Cook the sausage in a large skillet over medium heat until browned and fully cooked. Remove and set aside.
    • Melt the butter in the same skillet over medium heat. Whisk in the flour until smooth to form a roux.
    • Gradually whisk in the milk, stirring continuously until the mixture thickens and simmers. Season with salt and pepper to taste.
    • Add the cooked sausage back to the skillet and stir to combine into a creamy gravy.
  2. Bake the Tater Tots:
    • Preheat the oven to 425°F (220°C).
    • Spread the frozen tater tots in a single layer on a baking sheet. Bake for 20–25 minutes or until golden brown and crispy.
  3. Cook the Eggs:
    • While the tater tots bake, fry the eggs in a separate skillet to your preferred doneness.
  4. Assemble the Bowls:
    • Divide the crispy tater tots into four serving bowls.
    • Top each bowl with sausage gravy, a fried egg, and shredded cheddar cheese.
    • Garnish with chopped fresh chives, if desired.
